Cheesy Chicken Enchiladas

My family just loves this recipe.   I have made it several times and its great!! 

1/4 cup butter

1 cup chopped onion

2 cloves garlic, minced

1/4 cup all-purpose flour

1 cup chicken broth

4 oz cream cheese softened

2 cups shredded Mexican cheese blend

1 cup shredded cooked chicken

1 can (7oz) diced mild green chiles

1/2 cup diced pimentos

6 (8-inch) flour tortillas

1/4 cup chopped fresh cilantro

3/4 cup salsa

1.  Preheat oven to 350 degrees.  Spray 13 X 9 in baking dish with cooking spray.

2.  Melt butter in medium saucepan, add onion and garlic; cook and stir till onion is tender.  Add flour, stir. gradually add chicken broth, cook till slightly thickened.  Add cream cheese and stir till melted.  Stir in 1/2 cup shredded cheese, chicken, chilies and pimentos.

3.  Spoon about 1/3 cup of mixture onto each warm tortilla.  Roll up and place seam side down in prepared dish.  Pour any remaining mixture over top of tortillas and sprinkle rest of shredded cheese over top.

4.  Bake for 20 mins or until cheese is bubbly and lightly browned.  Sprinkle with Cilantro and serve with salsa.

 

I use only 1 (4 oz) can of chillies.  I also don't serve with cilantro or salsa.  My husband and I just love them without all the extra stuff.  They are great left over also!!

Thank you for sharing. The recipe we use at my house is a little different.

Cheese sticks work great for cheese enchiladas, it seems to melt really well. Then we put chili on top, toped with enchilada sauce and the cheese. For our beef, we use ready cooked fijata meet. From start to finish total time is about 45 min. There are never any left.
