I had a recipe for a Noel Log.  I believe it was in the Good House Keeping magazine in the 1970's (telling my age with that one!) and I have lost it over the years.  It had a sponge cake and the filling and frosting had rum flavoring in it.  I remember that you had to use real butter in the fronsting.  Does anyone have this recipe?  I have tried a lot of recipes for Noel Logs, but none that were as good as that one.

Re: Cookies

Have you tried the Good Housekeeping website?  It is possible that this time of year they would have it on their site.
If you don't find it try the Libby's pumpkin roll.  go to  http://www.verybestbaking.com  and check out the recipe there.  There is a video that shows ho to do it.  I am a big fan of that site.  (for some reason I can't it to accept my posts any more but I check it out almost daily)  I just made the pumpkin bread and pumpkin butter.  The pumpkin roll will be next weekend, dry run for the holidays.

Re:pumpkin butter

I got it from http://www.verybestbaking.com  but here it is, very simple.
Pumpkin butter
1 can pure pumpkin
1 apple grated
1 Cup apple juice
1/3 Cup brown sugar
1 teaspoon pumpkin pie spice
Place all ingredients in a heavy sauce pan.  Stir while cooking over med heat until thick.

Mixture will get thick and may burn if you don't stir. I did not have apple juice so I used 2 apples grated and about 1/4 cup of water.  I also think you could use apple cider or possibly 1/2 cup of applesauce in place of both apple and apple juice.  If you use the applesauce if it is sweetened I would cut back on the brown sugar.
This is great. I like this better than apple butter and I like it better than the purchased stuff.  I used a spoonful in some oatmeal this morning.
This is so quick and easy.

Re:pumpkin butter

I was wondering if I could make this in the slow cooker?  If so how long do you think it should cook?

Re:pumpkin butter

It was so fast on top of the stove that it probably wouldn't be worth getting out the slow cooker for this.  I don't think it took more than 20 minutes, and since I was doing other stuff I had the burner a little lower.
If you wanted to do it in the slow cooker I would think and hour or 2 would be enough.  That would be on low.
Good luck, let me know how it turns out.
