Favorite 'for two' recipes

I absolutely love keeping the perfect portion biscuits around for a really quick and easy "for two" meal.  I think my favorite are the Grands Biscuit Sandwiches since we can make up the eggs while the biscuits cook in the toaster over.

Anyone want to share their favorite meals for two?  Anything under 30 minutes is great since it always seems we're on the go and running out the door.

I made the Ham-Broccoli bread pudding and it was very good.  Keep an eye on the pan as it was a bit to browned on the bottom after the 45 minute cook time.  Next time I will add a bit more pepper to it.

I love the perfect portion biscuits too! I think they need to do the same thing with crescent rolls!

Hi, new to the post so I thought I'd jump right in!


One of my fav meals for the hubby and I is "Improvised Chicken Pot Pie" - more like Chicken and Biscuits, actually.  You need a store bought rotisserie chicken, carrots, onions, potatoes, frozen peas, chicken stock and I love the frozen Pillsbury Grande Biscuits.


Using a dutch oven, I saute carrots, potatoes and onions (all these veges could be bought pre-chopped), adding salt & pepper  and a pinch of dried thyme.  Once veges soften, add 2 boxes of chicken stock or some stock and water.  Boil (I'm impatient) until everything softens, then cube up and add rotisserie chicken and frozen peas.  Top with biscuits, dropping a smidge of butter and pinch of parsley on the biscuits.  Place dutch oven in 350 oven until biscuits cook up.


Delicious and perfect meal with a side salad.  Add as much of veges and chicken as you like, could even thicken broth with cornstarch if you need it.  My fav Pillsbury biscuits are the frozen ones but I love them all, have even used the flaky butter biscuits on top of my stew with tasty results.

This is my husband's favorite.  I usually buy the ingredients on Saturday, premake the recipe on Sunday - then have for dinner on Monday night.  We love lasagna, and this is made in a loaf pan - perfect for the two of us!


Petite Lasagna for 2:


1/2 lb bulk Italian Pork Sausage


1/4 c. chopped onion  (I buy the frozen, prechopped onions so they're always on hand)


1/4 c chopped green bell pepper (I buy the frozen, prechopped peppers so they're always on hand)


14 oz jar spaghetti sauce


3/4 c ricotta cheese


2 T grated parmesean cheese


2 T chopped fresh parsley (sometimes sub dried parsley and it's fine)


1 egg, beaten


3 frozen, precooked lasagna noodles, thawed OR 3 oven ready, no boil lasagna noodles (these are my favorite)


4 oz (1 C) shredded mozzeralla cheese


Heat over to 350.  Spray non-stick skillet with non-stick spray.  Add sausage, onion and pepper.  Cook and stir until browned; drain.  Reduce heat to low and add spaghetti sauce.  Simmer 5 minutes.


In a small bowl, combines cheeses, parley and egg.  Mix well.


Spread 1/4 C meat sauce in bottom of 8x4 loaf pan, ungreased.  Top with 1 noodle, 1/3 each of ricotta mixture, meat mixture, and mozzerella.  Repeat layers, starting with the noodle, ending with the cheese.


Bake at 350 for 35-45 minutes, until bubbly.  Let stand 5-10 minutes befor serving.


Can be made 1 day ahead.  Cover and refrigerate until ready to bake.

I loved these too until I discovered they have a good amount of trans fat.. Surprise  RE the perfect portions biscuits
